#78 The Keto Series (Part 1 of 2): What is the Ketogenic Diet, with Sue Wood

Susan Wood has worked as a UK registered dietitian for over 35 years, predominantly in the NHS, treating a wide range of paediatric and adult conditions. In 2008, the referral of one young adult for the dietary management of drug resistant epilepsy sparked her interest in ketogenic diet therapy (KDT) and since then she has been pioneering the development of adult treatment protocols in the UK and raising the awareness of dietitians and adult neurologists to the potential that KDT can offer to adults. 

In 2009 she started to work alongside the Matthews Friends Charity offering support to adults and their neurology teams seeking treatment. Sue continues to oversee the treatment of adults & children with drug resistant epilepsy and mentors NHS teams keen to explore KDT use in adults. She has recently co-authored reports on; the brain tumour patient experience of the use of KDT and the first international recommendations for the management of adults treated with ketogenic diet therapies. She is a member of the UK based Ketogenic Dietitians Research Network (KDRN) and a visiting lecturer at Surrey University.

Here are the recipes that I cooked with Sue:
Thai Coconut Soup: 1 can coconut milk (full fat) 5cm ginger, thinly sliced 1 garlic clove, thinly sliced 1 lemon grass 1 red chilli, halved 15ml tamari 1 tbsp fish sauce 10g Thai basil leaves, chopped 100g Red pepper, sliced 100g Mushroom, sliced 20g Coriander, chopped 20g Cashews, chopped 100g Pak Choi, chopped Method: Throw everything in a pan, bring to a simmer for 10-15 minutes and serve with coriander and cashew Overnight Chia and Coconut Breakfast: 1 can Coconut Milk 3 tbsp chia seeds 1 tbsp hemp seeds 1 tbsp sesame seeds 1 tsp Cacao powder 1 tsp Maca powder 30g Pistachios, chopped 30g Raspberries Throw everything in a bowl, leave for 8 hours, refrigerated Top with nuts and berries

In 2009 she started to work alongside the Matthews Friends Charity (http://www.matthewsfriends.org), offering support to adults and their neurology teams seeking treatment.  In 2011 she joined the newly formed clinical team at the Matthews Friends Centre for Ketogenic Dietary Therapies (https://www.mfclinics.com/); set up to complement existing NHS KDT provision, by providing a comprehensive neurology/ dietetic service to which adults and children, unable to access local NHS provision, could be referred.  She continues to oversee the treatment of adults & children with drug resistant epilepsy and mentors NHS teams keen to explore KDT use in adults e.g. with status epilepticus. She has recently co-authored reports on; the brain tumour patient experience of the use of KDT and the first international recommendations for the management of adults treated with ketogenic diet therapies (hopefully published in 2020). She is a member of the UK based Ketogenic Dietitians Research Network (KDRN) and a visiting lecturer at Surrey University. “Myths and misinformation about ketogenic diet therapy abound, both within medical and public circles. However, we cannot afford to overlook the therapeutic potential associated with the myriad of biochemical changes that the ketogenic fuel-switch offers. From the plate to the petri dish, we need more keto - knowledge and understanding”.
